Uhura Nyota
his friend
As the canon relationship between Spock and Uhura should be considered the one in the original series, while the other one in the alternate reality is quite different, thoughgh we are probably going to see where exactly it is going toward only in the in the next AR movie. Still we are used to see the canon in TOS and not AR, but being their interaction important to Spock in both the cases we will be talking about their relationship in both universe.
The Original Series
In
the original series Spock and Uhura share a friendship that could be seen also
as a teacher-student relationship. When Nyota asked him to teach her to play
the Vulcan lyre, Spock wasn’t really sure that she - as human - could
play it properly, but she's able to prove him wrong. Additionally she is the
only one who had the privilege of having her singing accompanied by Spock’s
playing.
Their relationship can be defined in few words from an interview with Nichelle Nichols – the actress palying Uhura at the time - who said that there was more to their relationship than visible on the screen:
“I created a relationship between Uhura and Spock as being her mentor and the person she looked up to. Uhura was the only one who could play the Vulcan lyre and the only one who had the audacity to sing a song teasing Spock.”

Their relationship can definitely be called friendship.
Alternate Reality
Differently
from the TOS relative, in the AR the relationship is not founded on friendship
but apparently rather on romantic interest between the two.
We feel like this relationship should be called illogical, if we were to quote
Vulcans, and that Abrams didn’t give much thoughght about it because of
a couple of serious issue. Even though Spock is a rebel at heart – by Vulcan
standards - he still follows rules and regulations when they are present, which
leads us to two reasons why this romantic relationship shouldn’t even
be considered:
1. it’s a professor - cadet relationship: definitely against any kind of proper conduct rugulation, which would mean that by being with her, he would be breaking the rules, and, as stated above, it’s a very improbable thing for Spock to do. Not to mention it's also questionable from a morale point of view.
2. it’s a direct superior officer - lower officer, ergo commander – lieutenant relationship: which is also called “fraternization”, and which is severely frowned upon – most of the times explicitly forbidden – in a military environments, which Starfleet is. Which means that again Spock would be breaking those rules that he likes so much to quote.
Also, in both cases, their interaction would be borderline the abuse of power or could be easily mistaken as such, and if the Spock from the AR actually tried to change the ship on which Nyota was assigned to “avoid the appearance of favoritism”, we don't see how he'd not try to avoid the appearance of abuse of power considering that it'd be a much more serious guilt, and therefore avoid a romantic relationship with her altogether.
But there it is anyway, they seem to have some chemistry going on, that is confirmed in a scene on the transportation pad in which Spock and Uhura kiss in front of Kirk and Scotty, and Spock calls her by her given name: Nyota.
Their relationship seem genuine, but still, there is no evidence if that relationship will or is going to continue, maybe that was a moment of craziness, because they both didn’t know if Spock was going to be able to come back.
At the end of the movie, when the young Spock speaks with the old Spock, he shows the intention to go back with his people to restore it, that means most likely taking a Vulcan wife and have Vulcan children, so we aren’t really sure where in this comes Nyota.
Aside the fact that Abrams will probably work on this hopefully being a real
Trekkie and give Nyota back to her intended (Yes Saya is a Scotty/Uhura shipper,
and so is Dragoneyes).
